Pizza eatery introduces New York water to create better pizzas

MELBOURNE - It's a little after 11 a.m. on a Tuesday morning, and Genna Pizza Company is already filled with customers.

Since taking over as the owner of the Melbourne pizzeria earlier this year, entrepreneur and chef Charlie Marchica's main goal was to make the best New York-style pizza in Brevard County. To put it simply, he has succeeded and the truth lies within the water.

After three months of research, Chef Marchica figured out a way to have actual New York water shipped to Genna Pizza Company.

"It makes all of the difference (in taste)," he said. "It's an actual New York style pizza."

With this new ingredient, Genna Pizza has created such an authentic New York-style pizza, it would seem as if it came straight from the big city itself.

"It's the one key that makes it a New York pizza. It's the icing on the cake," Chef Marchica continued. "I was able to find it for the right price, so my customers wouldn't have to pay for it."

Along with the water, Genna Pizza Company is slowly evolving its menu to include fresh New York Italian bread and a variety of pies, including a buffalo chicken pizza, a Philly cheesesteak pizza, a salad pizza and a chicken cordon bleu pizza.

Genna will also start serving new clubs, BLT's and subs made with fresh Italian bread, which Chef Marchica said is unlike anything else in the area.

Familiar favorites will also remain on the menu, such as cheese, supreme and the four seasons-style pizza that offers diners an experience of a variety of Italian toppings into one delicious blend.

When Chef Marchica took over the restaurant with his wife, Jeanine, the Long Island native "gutted" everything from the former restaurant - changing the inside and all of the recipes to his liking to make for a better dining experience.

"I buy premium ingredients for everything, and everything is made here in-house," he said. "My family is Italian on both sides. I had a guy from Sicily teach me how to make my dough, so I love Italian."

And his love for Italian cuisine is conveyed through his food, with delicious pastas that are sure to satisfy the biggest critic, including a spaghetti, with meatballs, entrée, a baked ziti entrée and a chicken Alfredo, made with fresh ingredients.

Following dinner, customers can select from a variety of delicious desserts, such as a homemade cannoli, tiramisu and a good-ol' fashioned cheesecake.

At the end of the day, what really separates Genna Pizza Company from other restaurants in the county is its commitment to providing top quality food for low prices.

"I understand that people don't want to spend a lot of money for dinner," Chef Marchica said. "I don't mind taking less on my end and giving my customers a real pizza for a decent price."

Genna Pizza Company is located at 4301 N. Wickham Road in Melbourne and is open seven days a week. Hours of operation are Monday through Thursday from 10 a.m. to 9 p.m., Friday and Saturday from 11 a.m. to 10 p.m. and Sunday from 11 a.m. to 9 p.m.
