Appetizers includes a deep-fried bean curd, served with tempura sauce, called "Age-Dashi Tofu."

Other appetizers include rock shrimp, which is fried shrimp tossed in a spicy, creamy sauce and the tempura sampler, a combination of battered fried shrimp and vegetables.

For the Hibachi grill, the Chen brothers and an ensemble of cooks can prepare a variety of favorites, including chicken, New York strip and filet mignon.

For sushi lovers, Sumo Japanese offers dozens of delicious rolls to choose from, including signature rolls the "Las Vegas," a salmon, kani, avocado and cream-cheese-filled roll with eel sauce and spicy mayo, and the "Godzilla," featuring deep fried spicy tuna and avocado with eel sauce and spicy mayo.

In the future, Ms. Chen said she hopes to see the restaurant continue to please its customers.
