CAPE CANAVERAL -- Hai Tran wants to give Cape Canaveral residents a chance to experience something different.

At Saigon Restaurant, located at 8501 Astronaut Blvd., guests can experience delicious, authentic Vietnamese cuisine, which is something offered no where else in the area.

"It's a comfortable atmosphere," Mr. Tran said about his restaurant. "It's not fast or pushing people out. We want people to enjoy their food in an environment that is not fine dining but has some taste."

The comfortable and eloquent establishment offers guest the choice of delicious soups, stir-fry entrees, appetizers and sushi.

Along with popular Vietnamese dishes, such as Bun Bo Xao Xa Ot, a dish with thin rice noodles, bean sprouts, shredded lettuce, cucumber and cilantro topped with sautéed beef, onions and scallions, Saigon Restaurant also offers authentic Thai.

"Most of the food we cook is street food from Vietnam and Thailand," Mr. Tran said. "It is for a normal person. You don't have to be rich to eat this food."

Since moving to the United States in 1992, Mr. Tran has worked in the restaurant business with his family in Savanna, Ga., where he meticulously developed his own recipes.

On Dec. 19, he opened the Saigon Restaurant, a place where he hopes residents will come for an enjoyable time and experience food that he says is healthier than most other cuisines.

"It's healthier for you because it doesn't sit on your stomach," he said. "In Vietnam, most of the food people eat is light. I hope people can give us a try and experience something different so they can expand their taste-buds."

Saigon Restaurant also offers Pad Thai, Tom Yum soup and a variety of sushi that is sure to please any sushi lover.

At the end of the day, and after making a variety of delicious dishes, Mr. Tran said he enjoys the simple things.

"I love coking all my own recipes and making food that people enjoy," he said. "I love seeing people happy when they eat."

Saigon Restaurant is located at 8501 Astronaut Blvd., and is open Sunday through Thursday from 11 a.m. to 9:30 p.m. and Friday through Saturday from 11 a.m. to 10:30 p.m.
